What You’ll Need:

  • Bulgur (you can use quinoa GF alternative)
  • 1/2 Red Bell Pepper
  • 1 Cucumber
  • 1/2 Red onion diced
  • 1 can of Chickpeas 15 oz (rinsed)
  • Feta cheese maybe 1/2 cup or to your liking
  • Sliced Kalamata olives
  • Optional: grilled chicken

5-Minute Lemon Dressing:

  • Olive oil
  • Fresh lemon juice
  • Ground cumin if you have it (gives it flavor)
  • Salt + pepper
  • Oregano

Shake and pour. Yes, you can also buy one ready-made to simplify life.

What You’ll Need:

  • Pre-cooked shrimp (huge time saver)
  • Jasmine rice or cauliflower rice
  • Diced mango
  • 1 Avocado
  • Shredded purple cabbage
  • Cilantro
  • Lime

Quick Lime Drizzle:

  • Lime juice
  • Olive oil
  • Honey
  • Pinch of sea salt

🌿 Bonus: Vietnamese Papaya Salad (Inspired by My Dad)

This one is special to me. My dad lived in Vietnam for a short time, and this fresh, crunchy salad always reminds me of him. My mom absolutely loves it! It’s bright, tangy, slightly sweet — and unbelievably refreshing in hot weather.

Ingredients

  • Shredded green papaya (or substitute shredded carrots + cabbage)
  • Fresh mint
  • Fresh cilantro
  • Thin sliced red chili (optional)
  • Crushed peanuts
  • Cooked shrimp or thin sliced chicken (optional)

Traditional-Style Dressing

  • Fresh lime juice
  • Fish sauce
  • Tiny bit of sugar
  • Garlic (minced); I don’t do garlic but you can

Toss everything together and top with peanuts.

It’s crunchy, herby, and feels like summer in Southeast Asia.
